Pretzels with Tzatziki Dip

NUMBER OF SERVINGS: 8-10 or more depending on ages
2 medium cucumbers, seeded and diced
Sea salt
If using fresh garden cucumbers or English cucumbers, leave the skins on! If using waxed cucumbers, please peel them. English cucumbers or seedless cucumbers may not need to be seeded. Place diced cucumber in a colander, sprinkle with salt, and let stand for 30 minutes to draw out water. Drain well and wipe dry with paper towel.
3 Tablespoons fresh lemon juice
1 garlic clove, chopped
1 Tablespoon fresh dill, finely chopped
Fresh ground black pepper (optional)
In food processor with steel blade, add cucumbers, garlic, lemon juice, dill, and a few grinds of black pepper if desired. Process until well blended.
3 cups Greek Yogurt (organic is best)**
Stir cucumber mixture into the yogurt. Taste before adding any extra salt, then salt if needed. Place in refrigerator for at least two hours before serving so flavors can blend. (This resting time is very important.) Store in the refrigerator. Drain off any water and stir each time you use it.

** If you don’t have Greek yogurt, place 1-2 coffee filters or cheese cloth in a mesh strainer or colander. Add plain yogurt and allow to strain over a bowl or pitcher for several hours or overnight in the refrigerator until thickened.
OPTIONS: For a different flavor, replace dill with chopped fresh mint. The Family Food Experts recommend replacing ground black pepper with paprika or a dash of cayenne pepper.
