Crunchy Turkey Meatballs

PREHEAT: 350 degrees F
PANS/EQUIPMENT: Mixing bowl, baking dish
PREP TIME: 20 minutes
COOK TIME: 25-30 minutes
NUMBER OF SERVINGS: 4-6 (or more depending on ages)

1 pound lean ground turkey
1 egg

In a mixing bowl, combine ground turkey with egg mixing it by hand.

2 Tablespoons ground flaxseed (keep in refrigerator or freezer)
1 Tablespoon finely chopped onion
1 teaspoon garlic powder

Add ingredients to turkey mixture, making it into a “dough”. Shape meatballs at whatever size you desire, and remember that smaller ones cook faster.

Add to a small plastic bag and crush them using your hands. Placed crushed Veggie Stix in a bowl. Then roll your turkey meatballs on the crushed Veggie Stix. Place them on the baking dish. Bake for 20-30 minutes depending on the size.

OPTIONS: These are great as appetizers, or to be served with tomato sauce over spaghetti. You may add ground veggies to your meatballs to sneak in some extra veggie servings. Sprinkle in 1 Tablespoon chopped fresh parsley for added color and nutrients. Make the meatballs bite sized and put on skewers with a cherry tomato half or just on a toothpick for a snack. Freeze any extras – they reheat for a quick snack!
