Chicken & Shrimp Pasta

PREHEAT: 2 burnersChicken & Shrimp Pasta
PANS/EQUIPMENT: 1 large skillet, 1 saucepan
PREP TIME: 10 minutes
COOK TIME: 15 minutes
NUMBER OF SERVINGS: 6-8 or more depending on ages

1 Tablespoon extra virgin olive oil
2 fresh boneless, skinless chicken breasts, cubed

Heat oil in large skillet over medium heat. Add chicken, stirring as needed until cooked through, about 5 minutes.  Remove from skillet and drain on paper towels.

1 (8-ounce) box Vita Spelt Organic White Spaghetti
Water for boiling pasta

Begin heating water in saucepan for pasta and cook pasta according to package directions and drain.

1 Tablespoon extra virgin olive oil
1/2 cup shredded carrots
1 (10-ounce) bag frozen broccoli florets, thawed
2 garlic cloves, chopped

While pasta is cooking, in skillet over medium heat add oil, carrots, broccoli, and garlic.  Saute for 2 minutes.

1 (12-ounce) bag medium frozen shrimp, thawed
2/3 cup all natural chicken broth
1/2 cup Parmesan cheese, freshly grated

Add broth, cheese, shrimp, and cooked chicken to vegetable mixture. Stir to combine and then reduce heat to simmer for about 4 minutes.

1 Tablespoon fresh basil, chopped
Drain pasta and add to mixture in skillet. Stir in basil and serve immediately. Add a sprinkle of basil and Parmesan cheese to each plate before serving! Crystal loves to use vegetables and herbs from her garden.

OPTIONS: Choose chicken broth without MSG and chicken raised without antibiotics!
