Chicken Margarita Pasta

PANS/EQUIPMENT: large pot, strainer, knife, cutting board, serving bowl
PREP TIME: 15 minutes
COOK TIME:
6-8 minutes
NUMBER OF SERVINGS:
3 or more, depending on ages

1/2 box pasta of choice (try spelt!)
1 Tablespoon extra virgin olive oil

Boil pasta per directions on package.  When finished strain and put into serving bowl, drizzle with olive oil.  Let pasta cool off for a few minutes.

1 large tomato
Remove seeds, chop into bite size pieces.  Add to pasta

4 ounces mozzarella cheese
Cube cheese.  Add to pasta

1/2 cup packed fresh basil leaves
Cut up into pieces and add to pasta.

1 can Shelton’s Premium Canned Chicken Breast
1/4 teaspoon sea salt
Juice of 1 lemon (about 2 Tablespoons)

Drain and rinse chicken, break up any large pieces.  Add to pasta. Toss all ingredients together and serve immediately.

OPTIONS: Crystal suggests using cherry or grape tomatoes for less prep time. She also gives an option of cutting mozzarella string cheese into small circles instead of using mozzarella cubes. Add extra fresh chopped basil as a garnish! All ingredients can be customized for serving needs.

Super excited about this site! My kids are so picky! I am so sick and tired of feeding them chicken nuggets and fries! And they refuse to eat veggies! Looking forward to these emails!
